6 cups/ 2 pounds strawberries
1/4 cup fresh lemon juice
2 cups sugar
3 vanilla bean, split lengthwise with the inner scraped out
*Then cut your vanilla beans into one inch pieces to place in your jars.
this is going to make this jam crazy vanilla delicious
Combine all ingredients in a large saucepan. Smash the berries to break them up I use a potato smasher. Bring the mixture to a boil over medium high heat, stirring frequently.
Reduce heat and simmer mixture until thickened, about 1 hour. Skim foam off of the top, add one vanilla strip to each jar, and spoon into your jars.
Wipe the rims of the jars pop the lid on and cap with a clean ring. Not to tight just secure them then off to the water bath!
Make sure you use sterilized jars and boil filled jars for 15 minutes.
