GINGERBREAD JAM
6 cups apples (peeled, cored and chopped) ~ I use Granny Smith
Short cup of molasses
1 1/2 cups sugar
2 teaspoons ginger
1 teaspoon ground cloves
1 teaspoon cinnamon
2 Tablespoons lemon juice
Cook apples with @ 1/2 cup of water until soft.
Mix sugar and spices and add to apples.
Add molasses and lemon juice.
Cook about 15 minutes for flavors to mix.
Use an immersion blender to pulverize the apples for a smooth texture.
1/4" head space/water bath 10 minutes
Yield @ 5 half pint jars.
