Raspberry Cinnamon Jam

This little yum yum on home made bread....

Raspberry Cinnamon Jam 

8 cups of  raspberries
4 cups of sugar
1 lemon juiced
2 tablespoons cinnamon
2 fresh sticks cinnamon
1 packet of liquid pectin or one box powder

In a large pot put your berries and let them simmer down . Add your sugar and cinnamon slowly and stir until it is well combined and the sugar has dissolved. Bring these to a boil and stir - stir - stir for say 5 minutes. Now add the two cinnamon sticks and allow them to steep - turn the heat to medium keeping a slight boil say medium heat and cook for 15 minutes more ...now add the lemon and pectin...ok back up to a boil for 5 more minutes..Remove the cinnamon sticks prior to jarring up.
* Note I break the cinnamon stick and put them in the jars I plan to keep. Large enough not to eat!


Ladle the jam into sterilized half-pint jars, wipe the rims...add lids and rings, and process in a boiling-water bath for 10 minutes.
